1 midi cos lettuce
3 slices wholemeal bread
2 lemons juiced
50ml garlic olive oil
1/2 tsp salt
1/4 tsp pepper
Cut the bread into cubes and fry. Drain on paper towel and allow to cool.
Combine the garlic oil, lemon, salt and pepper and whisk to make the dressing.
Chop the lettuce into bite size pieces and place in a salad bowl.
Add the croutons and dressing and toss to combine.
