Autumn Apple Salad with Cinnamon

1/4 cup apple cider vinegar
1 tablespoon honey
2 teaspoons honey mustard
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3 tablespoons olive oil
2 large apples, unpeeled and finely chopped
1/2 cup dried cranberries
1 Baby Cos lettuce, finely chopped
1 large sweet onion, finely chopped
1/4 cup toasted chopped pecans

In a mixing bowl, add the Vinegar, Honey, Mustard, Salt and Cinnamon.
Whisk to combine while slowly adding the Oil.
Pour half the dressing into a small serving bowl.
Add the remaining ingredients to a large salad bowl with half the dressing and toss to coat evenly.
Serve immediately, adding remaining dressing as desired.
