Chicken San Choy Bow

2 midi cos lettuce (separated and washed)
500g lean chicken mince
1 onion (diced)
2 cloves garlic (finely chopped)
1 large potato (diced)
2 Tbsp salt reduced soy sauce
1 Tbsp hoisin sauce
1 tsp sesame oil
1 tsp kecap manis
oil for frying

Separate and wash cos lettuce leaves. Set aside.
In a hot pan, add oil and lightly brown chicken mince.
Add potatoes, onions and garlic.
Stir fry for about 3 minutes or until chicken mince has browned all over.
Mix in soy sauce, hoisin sauce, sesame oil and kecap manis.
Stir fry until all heated and combined.
Evenly spoon mixture into cos lettuce leaves.
