Chinese Broccoli with Garlic

One bunch of Chinese Broccoli
1 1/2 tablespoons of cooking oil
3 cloves of Garlic, finely chopped
2 or 3 thin slices of ginger
1 tablespoon fish sauce
3 tablespoons oyster sauce
pinch salt
1/2 teaspoon cornflour

Chop the Chinese Broccoli into 4-5cm lengths, washing and separating the leaves from the stems.
Heat up a wok, add in some oil and fry the garlic and ginger for about 30-60 seconds until fragrant.
Add in the Chinese Broccoli stems, 1/2 a cup of water and stir fry for 2-3 minutes until the stems tum a nice dark green colour.
Add in the Chinese Broccoli leaves and fry for 20-30 seconds. Then add in a little salt, fish sauce and oyster sauce.
Stir-fry everything together, then thicken the sauce with some corn flour mixed with a little water.
– Do not overcook the Chinese Broccoli, the stems should have a satisfying crunch when you bite into them.
