Lebanese Marinated Salad

One Cos lettuce, ribs removed
½ Lebanese cucumber, roughly chopped, skin on.
500g chopped tomato or halved grape tomatoes
1/2 red onion, coarsely chopped
1/2 bunch parsley, stems removed, coarsely torn
large handful of fresh mint leaves
1 lemon juice and zest
extra virgin olive oil
fine sea salt
freshly cracked pepper

Assemble all the vegetables in a large salad bowl.
Squeeze the juice of an entire lemon over the veggies, and douse generously with olive oil.
Add pepper, and half the lemon zest and salt.
Toss that salad, wait 10 minutes and drain the excess liquid.
Toss the salad again and sprinkle with the remainder of the lemon zest.
