Stir-fry Chicken with Celery

4 celery stems, sliced into 1cm pieces
2 carrots, sliced diagonally into bite-sized pieces
1 red capsicum, sliced into bite-sized pieces
1 small can of Chinese straw mushrooms, rinsed and drained.
2 chicken thigh fillets, cut into bite-sized pieces
3 cloves garlic, finely chopped.
1 inch ginger root, thinly sliced.
1 tablespoon light soy sauce
2 tablespoons oyster sauce
1 tablespoon chinese cooking wine
1/2 teaspoon sesame oil
Salt, Sugar and Pepper to taste

Heat some oil in a hot wok.
Add garlic and stir fry until fragrant.
Add chicken. Stir fry until cook.
Add carrots, then the remaining vegetables. Stir fry quickly.
Add all the sauces and ginger. Toss and combine all ingredients.
Add some starch mixed with water to thicken the sauce.
Sprinkle salt, sugar and pepper to taste.
